About Going Meatless
For today, we want to remind you that there is no need whatsoever to be eating meat as much as we do. Somewhere along the line our healthy diet of mainly fruits and veggies got turned upside down and since then we have become a nation of mainly meat eaters...which is one of the biggest problems we have today with regard to good health and well being.
To confuse matters even more are the myths about a diet free from meat. The fact is: there are virtually no nutrients in animal foods that are not better provided by plants. Veggies have radically more antioxidants, fiber and minerals than meat.
Meat actually is devoid of many nutrients that are found in plant foods. There are 4 nutrients which animal-based foods have that plant-based foods (for the most part) do not have: cholesterol (not an essential nutrient) and vitamins A, D and B12.
Cholesterol is essential for health but our bodies can make all that we need. We do not need to eat meat for cholesterol ~ quite the opposite, those who have a diet heavy in meat find they develop dangerous cholesterol levels in their bodies.
Vitamin A is easily made by our bodies from beta-carotene, and Vitamin D is also readily made by our bodies simply by exposing ourselves to sunshine for 15 minutes every couple days. Know that both these vitamins are toxic if they are consumed in high amounts.
Vitamin B12 is not as simple. B12 is found in the soil and is made by microorganisms in the intestines of animal, including humans. The amount made in our bodies is not adequately absorbed and therefore insufficient, so we need to get B12 through the food we eat. Research shows that we can get enough B12 through fruits and veggies that have been grown in rich, healthy soil (organic farming), but plants grown in "lifeless" soil (non-organic) do not typically contain B12 (yet another reason to eat organically grown foods.)
Because most of the soil used in agriculture in the U.S. is lifeless, Vitamin B12 is one of the few supplements that are recommended. The other supplement would be Vitamin D if you are one of those unfortunate people who do not see sunshine much.
