About BaiTsai (aka BokChoy)
I grew up eating BaiTsai (as pronounced in Mandarin versus the more popularly known Bok Choy which is the Cantonese pronunciation.) It is also called Chinese Cabbage (click here for some great info & very simple recipes on a good selection of Chinese greens.)
I did not realize how incredibly healthful it is until recently. BaiTsai is very high in vitamin A and also in vitamin C. It is made up of carotenoids (dark-colored dyes (pigments) found in plant foods that can turn into a form of vitamin A) which ultimately protects our cells from certain chronic diseases and the aging processes.
Most of our sources of vitamin A are high in saturated fats & cholesterol (animal liver, whole milk, fortified foods.)
Add this wonderful green to homemade soups or just stir-fry it with oyster sauce...add it to your diet today!
