for the love of Brussels Sprouts

We love simple, straightforward , easy recipes.

We love Brussels Sprouts.  They are so easy to prepare and cook, and are extremely healthful and delicious.  Adding Walnuts and Cranberries make this delightful recipe even more healthful.

*Brussels Sprouts are a source of a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells.

Here is one of my favorites pour vous.

  1. Heat a large skillet med/high heat. Add 1/2c coarsely chopped walnuts & toast 3/4 minutes or until fragrant. Transfer to plate & set aside.
  2. Wipe out skillet, return to heat & add 2 tsp EVOO, coating bottom. Add 1.5lbs Brussels Sprouts, halved & cook 5 minutes or until browned. Stir occassionally.
  3. Add 2 shallots halved & sliced & 1 clove minced garlic ~ cook 1 more minute.
  4. Stir in 1/4c coarsely chopped dried cranberries, 1 tbs agave syrup, & 1c H2o.
  5. Partially cover skillet, reduce heat to med & simmer 5/7 minutes or until most of the liquid is gone. BSprouts should be tender but not soft.
  6. Stir in 1 tbs walnut oil & the toasted walnuts.

All this for 172 cal/.5c serving: 5g of protein & 5g of fiber, 124 mg salt, 0 chol, 1g sat fat, 19g carb, 9g sugars
