Proteins for Monday (meatless!)
For our Meatless Monday, a few ideas to help you eat less animal protein and more plant proteins:
Beans and veggies contain proteins, from which even little helpings add up. Keep chickpeas, lentils, kidney, white or black beans on hand and swap a 1/4cup of them for an ounce of meat in chilli, tacos and pasta salads. Click here for chickpea recipes.
Use cubed tofu in soups or marinate it with some cucumbers for a light, healthy, tasty salad. Click here for our tofu recipes.
And of course, quinoa (one of our favorite superfoods), is a complete protein. Quinoa is a fast cooking grain that makes an excellent alternative to rice or pasta. See our Monday, January 10th entry on quinoa and click here for our quinoa recipes.
Enjoy your day and have FUN being creative about your protein intake!
