Last August an article was posted about a book titled: Absolute Khushwant: The Low-Down On Life, Death & Most Things In-Between, by Khushwant Singh. This interesting post included Mr Singh's eight insights into a life of peace and happiness. He writes:
I’ve lived a reasonably contented life. I’ve often thought about what it is that makes people happy—what one has to do in order to achieve happiness.
First and foremost is good health. If you do not enjoy good health, you can never be happy. Any ailment, however trivial, will deduct something from your happiness.
I could not agree more with him of course. I added my agreement to the comments of which there were many (and many of them critical of this man who has obviously lived a full life.) Again, I propose, it is not about dying, it is about living. It is about living in the moment...about approaching each day with a positive attitude and angle, about connecting and going forward, no matter what burden you carry. But to do this, to live a truly happy life, you must have good health, or at least, the best health possible. And the only way to optimal health, truly healthy living, is through eating mainly fruits and vegetables.

Click here for Menu & Recipes. Please note that pairing spinach (today's showcase veggie) with tomatoes helps our bodies absorb the iron in the spinach much better, so feel free to add tomatoes to the dishes as a side or straight in!
